A creamy, tangy, and gently spiced cheese dip infused with Irish stout. This make-ahead appetizer is perfect for parties, improving in flavor overnight for a complex and craveable spread.

  • 16 oz cream cheese, softened
  • 8 oz sharp cheddar cheese, shredded
  • 1/2 cup Irish stout (like Guinness)
  • 1/2 cup sour cream
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons Dijon mustard
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, beat softened cream cheese with a hand mixer until smooth.
  3. Add sour cream, Worcestershire sauce, Dijon mustard, garlic powder, onion powder, smoked paprika, salt, and pepper. Beat until fully combined and creamy.
  4. With mixer on low, gradually pour in the Irish stout, mixing until smooth.
  5. Use a spatula to fold in the shredded cheddar cheese by hand until just incorporated.
  6. Transfer mixture to a greased or parchment-lined oven-safe dish (like a 9-inch pie plate or 8×8 baking dish).
  7. Bake for 20-25 minutes, until edges are bubbling and top is lightly golden.
  8. Let dip rest for 5 minutes before serving to allow it to set to the perfect dipping consistency.

Notes

For best results, shred cheese from a block. Dip can be prepared a day ahead, stored covered in the fridge, and baked before serving. Flavors deepen overnight. Serve with soft pretzels, crackers, or vegetable sticks.
