Ingredients

Scale
  • 2 cups all-purpose flour, plus more for dusting
  • 1 tablespoon baking powder
  • 1 teaspoon granulated sugar
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 6 tablespoons cold unsalted butter, cubed
  • 1 1/2 cups (about 6 oz) grated sharp Irish cheddar cheese, divided
  • 1/4 cup finely chopped fresh chives
  • 1/4 cup finely chopped fresh parsley
  • 3/4 cup cold whole milk, plus 1 tablespoon for brushing

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, baking powder, sugar, salt, and pepper.
  3. Add cold cubed butter. Use a pastry cutter or forks to cut butter into flour until mixture resembles coarse crumbs with some pea-sized pieces.
  4. Stir in 1 1/4 cups of the grated cheddar. Gently fold in chopped chives and parsley.
  5. Make a well in center. Pour in 3/4 cup cold milk. Stir with a fork or spatula just until a shaggy dough forms.
  6. Turn dough onto a lightly floured surface. Gently knead and pat 4-5 times until it just comes together into a ball.
  7. Pat dough into a 7-inch circle, about 3/4-inch thick. Cut into 8 equal wedges with a sharp knife.
  8. Place wedges on prepared baking sheet, spaced apart. Brush tops with remaining 1 tablespoon milk. Sprinkle with reserved 1/4 cup cheese.
  9. Bake for 18 to 22 minutes, until puffed, golden brown on top, and deeper golden on bottom.
  10. Cool on pan for 5 minutes, then transfer to a wire rack. Serve warm.

Notes

Keep all ingredients cold for flaky layers. Do not overwork the dough. For best flavor, use fresh herbs and a good aged cheddar. Scones can be frozen before or after baking.
