A vibrant and refreshing fruit salad where a simple honey lime dressing macerates the fruit, creating a naturally sweet and saucy treat. This recipe is incredibly quick to make, endlessly adaptable with seasonal fruit, and perfect for brunches, desserts, or a healthy snack.

Ingredients

  • 1 lb fresh strawberries, hulled and quartered
  • 1 pint fresh blueberries
  • 3-4 ripe kiwis, peeled and sliced
  • 1 lb seedless grapes, red or green
  • 2-3 mandarin oranges or clementines, peeled and segmented
  • 1 cup fresh pineapple chunks
  • 1/4 cup honey
  • Zest of 1 lime
  • 3 tablespoons fresh lime juice
  • 1 teaspoon pure vanilla extract
  • A tiny pinch of salt

Instructions

  1. Wash and thoroughly dry all fruit. Hull and quarter strawberries. Peel and slice kiwis. Segment mandarins. Leave grapes whole or halve them.
  2. In a small bowl or jar, whisk together the honey, fresh lime juice, lime zest, vanilla extract, and a tiny pinch of salt to make the dressing.
  3. In a large serving bowl, combine all the prepared fruit.
  4. Drizzle the honey lime dressing over the fruit.
  5. Gently toss the fruit with a spatula until evenly coated with the dressing.
  6. Let the salad rest at room temperature for at least 15-20 minutes to allow the flavors to meld and the fruit to macerate before serving.

Notes

For best results, add delicate fruits like bananas just before serving. The salad can be refrigerated for 1-2 days, though the fruit will soften. For a vegan version, use agave or maple syrup instead of honey.
