  • 1 baguette, sliced into 1/2-inch thick rounds
  • 4 ounces creamy goat cheese, at room temperature
  • 2 tablespoons high-quality honey, plus more for drizzling
  • 1 tablespoon fresh thyme leaves (or 1 teaspoon dried)
  • 1 teaspoon lemon zest
  • 2 tablespoons extra virgin olive oil
  • 1 clove garlic, peeled and halved
  • Flaky sea salt and freshly cracked black pepper
  • Optional garnish: toasted chopped walnuts or red pepper flakes

Instructions

  1. Preheat oven to 400°F (200°C). Arrange baguette slices on a baking sheet in a single layer. Brush both sides lightly with olive oil. Bake for 6-8 minutes, flipping halfway, until golden and crisp.
  2. While bread toasts, mix goat cheese, 2 tablespoons honey, lemon zest, and most of the thyme leaves in a small bowl. Season with black pepper. Mix until smooth.
  3. Once toasts are out of the oven, immediately rub the cut side of the garlic clove over the top of each warm slice.
  4. Generously spread the honey goat cheese mixture onto each garlic-rubbed toast. Drizzle with extra honey, sprinkle with remaining thyme, flaky sea salt, and optional garnishes. Serve immediately.

Notes

For best results, ensure goat cheese is at room temperature for easy spreading. The bruschetta is best assembled and eaten immediately, but components can be prepped ahead. Store toasted bread in an airtight container and cheese spread covered in the fridge.
