These roasted chickpeas are a perfect healthy snack. They are crispy, savory, and packed with protein. Making a double batch ensures you have a nutritious option ready all week.

Ingredients

  • 2 cans (15 oz each) chickpeas, drained and rinsed
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1/2 tsp cumin
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Pat chickpeas dry with a clean towel to remove excess moisture.
  3. In a bowl, toss chickpeas with olive oil and spices until evenly coated.
  4. Spread chickpeas in a single layer on a baking sheet.
  5. Roast for 25-30 minutes, shaking the pan halfway, until crispy and golden.
  6. Let cool completely before storing in an airtight container.

Notes

For extra crispiness, leave the chickpeas in the oven with the heat off for 10 minutes after roasting. Store in an airtight container for up to one week.
