This vibrant guacamole celebrates simplicity, where ripe avocados are balanced by a generous amount of fresh lime juice. The result is a bright, creamy, and addictive dip that stays green and fresh. It’s the perfect easy anchor for any gathering, from taco nights to parties.

Ingredients

  • 3 ripe Hass avocados
  • Juice of 2 large limes (about 1/4 cup)
  • 1/3 cup finely diced red onion
  • 1/2 cup finely chopped cilantro
  • 1 jalapeño, seeds and ribs removed, finely diced
  • 1 large roma tomato, seeds and pulp removed, diced
  • 1 large clove garlic, minced or pressed
  • 1 teaspoon kosher salt, plus more to taste
  • 1/4 teaspoon ground cumin (optional)

Instructions

  1. Prep all ingredients: dice the onion, tomato, jalapeño, and cilantro. Mince the garlic. Halve, pit, and scoop the avocado flesh into a medium bowl.
  2. Mash the avocados with a fork or potato masher to your desired consistency, leaving some chunks.
  3. Immediately add the fresh lime juice and sprinkle with salt (and optional cumin). Stir to combine. The lime juice prevents browning.
  4. Gently fold in the diced red onion, jalapeño, tomato, cilantro, and garlic until just combined.
  5. Taste and adjust seasoning with more salt or lime juice as needed. Serve immediately.

Notes

For best results, use ripe but firm avocados. Always add lime juice immediately after mashing to preserve color. To store, press plastic wrap directly onto the surface of the guacamole before refrigerating for 1-2 days.
