  • 1/2 cup grated cucumber, squeezed dry
  • 1 tablespoon fresh lemon juice
  • 1 small clove garlic, minced
  • 1 tablespoon fresh dill, chopped
  • Salt and pepper to taste
  • Cooked quinoa, rice, or couscous
  • Cherry tomatoes, halved
  • Sliced cucumber
  • Kalamata olives

Instructions

  1. Make the tzatziki sauce by combining Greek yogurt, grated cucumber, lemon juice, minced garlic, and dill in a bowl. Season with salt and pepper. Stir well, cover, and refrigerate.
  2. In a large bowl, gently combine ground chicken, panko, egg, garlic, red onion, parsley, oregano, dill, cumin, salt, and pepper. Do not overmix.
  3. With slightly wet hands, roll the mixture into 1-inch meatballs, yielding about 18-20.
  4. Heat olive oil in a large skillet over medium heat. Add meatballs in a single layer, cooking in batches if needed. Cook for 8-10 minutes, turning to brown all sides, until cooked through (internal temperature of 165°F).
  5. While meatballs cook, prepare your base grains and slice the fresh vegetable toppings.
  6. Assemble bowls with a base of grains, add fresh vegetables and olives, top with warm meatballs, a dollop of tzatziki, and a sprinkle of feta and fresh herbs. Serve immediately with lemon wedges.
