  • 1 cup high-quality mayonnaise
  • 1 cup freshly grated Parmigiano-Reggiano cheese (about 2.5 ounces)
  • 3-4 large cloves garlic, finely minced
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon freshly ground black pepper
  • 1/8 teaspoon smoked paprika (optional)
  • 2 tablespoons finely chopped fresh parsley
  • 1-2 teaspoons fresh lemon juice

Instructions

  1. Finely grate the Parmigiano-Reggiano cheese. Mince the garlic and chop the parsley.
  2. In a medium bowl, combine the mayonnaise, grated cheese, minced garlic, onion powder, black pepper, and smoked paprika (if using). Stir until well combined and creamy.
  3. Add the chopped parsley and 1 teaspoon of lemon juice. Stir again. Taste and adjust, adding more lemon juice or garlic if desired.
  4. Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld. Stir once more before serving.

Notes

For the best texture, grate your own cheese from a block. Letting the dip rest is crucial for mellowing the raw garlic flavor. For a warm version, bake at 375°F for 15-20 minutes until bubbly.
