These handheld bites combine the classic flavors of a juicy cheeseburger with soft, buttery dough, all baked until golden.   • For the Filling:
  • 1 pound ground beef (80/20 blend)
  • 1 small yellow onion, finely diced
  • 2 cloves garlic, minced
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • Salt and freshly ground black pepper, to taste
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • For the Dough & Topping:
  • 1 (16.3 oz) can refrigerated biscuit dough (8 count)
  • 1/4 cup (1/2 stick) unsalted butter, melted
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon fresh parsley, finely chopped
  • 1/2 teaspoon garlic powder

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a standard muffin tin.
  2. In a large skillet over medium heat, cook ground beef and onion until beef is browned and onion is soft. Drain excess grease.
  3. Stir in minced garlic, Worcestershire sauce, smoked paprika, oregano, salt, and pepper. Cook 1 minute. Remove from heat and let cool 5 minutes.
  4. Stir cheddar and mozzarella cheeses into the slightly cooled meat mixture until combined.
  5. Separate biscuit dough. Gently stretch each biscuit into a 4-inch circle.
  6. Place a heaping tablespoon of filling in the center of each dough circle. Gather edges up and over filling, pinching tightly to seal.
  7. Place each bomb seam-side down in a cup of the prepared muffin tin.
  8. In a small bowl, mix melted butter, Parmesan, parsley, and garlic powder. Brush generously over tops of bombs.
  9. Bake for 18-22 minutes, until tops are deep golden brown and dough is cooked through.
  10. Let cool in pan for 5 minutes before serving warm.

Notes

Let the meat mixture cool slightly before adding cheese to prevent a greasy filling. Do not overfill the dough to avoid bursting. The muffin tin helps maintain the bomb shape. For a dipping sauce bar, serve with ketchup, mustard, ranch, or sriracha mayo.
