A simple one-pan dinner where chicken is seared and simmered in a fragrant garlic and herb pan sauce. It’s a cozy, flavor-packed meal perfect for busy weeknights, ready in about 30 minutes.

  • 1.5 to 2 pounds boneless, skinless chicken thighs
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 whole head of garlic, cloves separated and minced (about 8-10 cloves)
  • 2 teaspoons dried Italian seasoning
  • 1 teaspoon smoked paprika
  • ½ teaspoon onion powder
  • Salt and freshly ground black pepper, to taste
  • ½ cup low-sodium chicken broth
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons chopped fresh parsley, for garnish

Instructions

  1. Pat chicken dry with paper towels. Season both sides with salt, pepper, Italian seasoning, smoked paprika, and onion powder. Let sit for 5 minutes.
  2. Heat olive oil and butter in a large skillet over medium-high heat. Add chicken in a single layer and sear for 5-7 minutes per side until golden brown. Remove chicken to a plate.
  3. Reduce heat to medium. Add minced garlic to the skillet and cook for 30-60 seconds, stirring constantly, until fragrant.
  4. Pour in chicken broth and lemon juice, scraping up the browned bits from the pan bottom. Simmer for 2-3 minutes to reduce slightly.
  5. Return chicken and any juices to the skillet. Spoon sauce over the chicken and cook for another 3-5 minutes until chicken is cooked through and sauce has thickened.
  6. Remove from heat, garnish with fresh parsley, and serve immediately.

Notes

For chicken breasts, reduce cook time to prevent drying. Use all olive oil for a dairy-free version. Do not crowd the pan when searing to ensure a good crust. The browned bits in the pan are essential for flavor, so be sure to deglaze.
