Tender, juicy steak bites seared to perfection and tossed in a rich garlic butter sauce. This 15-minute recipe is perfect for busy weeknights and delivers steakhouse flavor with minimal effort.

  • 1 pound sirloin steak (or ribeye, strip steak), cut into 1-inch cubes
  • 2 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika (optional, for color)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Pat the steak cubes dry with paper towels. Season generously with salt, pepper, and paprika if using. Let them sit at room temperature for 5 minutes while you heat the pan.
  2. Heat a large cast-iron skillet or heavy-bottomed pan over high heat. Add the olive oil. Once it shimmers, add the steak cubes in a single layer. Do not overcrowd the pan. Sear for 2–3 minutes per side until deeply browned. Use tongs to flip each piece.
  3. Reduce heat to medium. Push the steak to one side of the pan. Add the butter and minced garlic to the empty space. Let the butter melt and sizzle for about 30 seconds, stirring the garlic. Then toss the steak bites in the garlic butter for another minute. Remove from heat immediately.
  4. Transfer the steak bites to a plate. Spoon any remaining garlic butter from the pan over the top. Let them rest for 2 minutes. Garnish with fresh parsley and serve hot.

Notes

For dairy-free, substitute butter with coconut oil or plant-based butter. For extra richness, add a splash of Worcestershire sauce or a pinch of red pepper flakes. Avoid overcooking; aim for medium-rare (internal temp 130°F) as carryover cooking will continue.
