A homemade love letter to the iconic lunchbox treat. These brownies feature a dense, fudgy base made with Dutch-process cocoa, topped with a glossy chocolate ganache and classic rainbow candy sprinkles for a perfect bite of nostalgic comfort.

  • 1 cup unsalted butter
  • 1 1/4 cups granulated sugar
  • 3/4 cup packed dark brown sugar
  • 4 large eggs, room temperature
  • 1 tablespoon pure vanilla extract
  • 1 cup all-purpose flour
  • 1 cup Dutch-process cocoa powder
  • 1/2 teaspoon salt
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup heavy cream
  • 1/2 cup rainbow candy-coated chocolates

Instructions

  1. Preheat oven to 350°F. Line a 9×13 inch baking pan with parchment paper.
  2. Melt butter in a large microwave-safe bowl. Whisk in granulated and brown sugars until smooth.
  3. Let butter-sugar mixture cool slightly. Whisk in eggs one at a time, then whisk in vanilla.
  4. Sift flour, cocoa powder, and salt into the wet ingredients. Fold with a spatula until just combined.
  5. Spread batter evenly into the prepared pan. Bake for 28-32 minutes, until a toothpick inserted comes out with a few moist crumbs.
  6. Cool brownies completely in the pan on a wire rack.
  7. Make ganache: Place chocolate chips in a heatproof bowl. Heat cream until simmering, then pour over chips. Let sit 1 minute, then whisk until smooth.
  8. Pour ganache over cooled brownies. Immediately sprinkle with candy-coated chocolates, pressing gently to adhere.
  9. Let ganache set for at least 1 hour before slicing and serving.

Notes

For best results, use Dutch-process cocoa for deep flavor and color. Do not overbake. Ensure brownies are completely cool before adding ganache to prevent a greasy texture. Store in an airtight container.
