Frozen Yogurt Granola Cups

A make-ahead, no-bake breakfast or snack. A crunchy granola crust holds creamy frozen yogurt and fresh berries, perfect for grab-and-go mornings.

  • For the Granola Crust:
  • 2 cups old-fashioned rolled oats
  • 1/2 cup creamy almond butter or peanut butter
  • 1/3 cup pure maple syrup or honey
  • 2 tablespoons melted coconut oil or butter
  • 1 teaspoon pure vanilla extract
  • 1/2 teaspoon ground cinnamon
  • A pinch of fine sea salt
  • For the Filling & Topping:
  • 2 cups plain Greek yogurt
  • 2-3 tablespoons maple syrup or honey, to taste
  • 1 teaspoon vanilla extract
  • 1 1/2 cups mixed fresh berries
  • Optional: mini chocolate chips or chopped nuts

Instructions

  1. Line a 12-cup muffin tin with liners.
  2. In a large bowl, combine oats, cinnamon, and salt.
  3. In a microwave-safe bowl, warm almond butter, 1/3 cup maple syrup, and coconut oil for 30 seconds until stir-able. Whisk in 1 tsp vanilla.
  4. Pour wet mixture over oats and stir until fully coated and mixture holds together.
  5. Divide mixture among muffin cups. Press firmly into bottom and up sides to form a cup shape.
  6. In a medium bowl, whisk Greek yogurt, 2-3 tbsp maple syrup, and 1 tsp vanilla until smooth.
  7. Spoon yogurt filling into granola cups. Tap tin on counter to settle.
  8. Top each cup with fresh berries.
  9. Freeze for at least 4 hours, or until firm. Store frozen in an airtight container.

Notes

Use thick Greek yogurt for best texture. Press crust firmly to prevent crumbling. For dairy-free, use coconut yogurt. Thaw at room temp for 30-45 minutes before eating.
