A one-pan weeknight wonder featuring savory ground beef, tender pasta, and melted cheese baked in a rich tomato sauce. This comforting casserole comes together quickly with pantry staples for a cozy family meal that feels like a hug.

  • 1 pound lean ground beef
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 1 (24 ounce) jar marinara or pasta sauce
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 2 cups uncooked small pasta (rotini, penne, or shells)
  • 2 cups beef or vegetable broth
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups shredded Italian cheese blend
  • 1/2 cup full-fat sour cream
  • Fresh basil or parsley for garnish (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large oven-safe skillet or 9×13 inch baking dish, cook ground beef and onion over medium-high heat until beef is browned. Drain excess grease.
  3. Stir in minced garlic and cook for 30 seconds until fragrant.
  4. Add marinara sauce, diced tomatoes with juices, uncooked pasta, broth, Italian seasoning, salt, and pepper. Stir well to combine, ensuring pasta is submerged.
  5. Cover tightly with foil and bake for 25 minutes.
  6. Carefully remove from oven. Uncover and stir. The pasta should be tender.
  7. Dollop sour cream over the casserole and stir it in gently.
  8. Sprinkle shredded cheese evenly over the top.
  9. Return to the oven, uncovered, for 5-10 minutes until cheese is melted and bubbly.
  10. Let the casserole rest for 5 minutes before serving. Garnish with fresh herbs if desired.

Notes

For a lighter version, use ground turkey, whole wheat pasta, or Greek yogurt instead of sour cream. Ensure pasta is fully submerged in liquid before baking. Letting it rest thickens the sauce.
