A budget-friendly one-pan meal featuring tender chicken thighs and bell peppers in a smoky tomato sauce. Ready in 30 minutes with minimal cleanup, it’s a comforting and adaptable dinner solution for busy nights.

  • 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 1 cup chicken broth
  • 2 teaspoons smoked paprika
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Pat chicken pieces dry and season with salt, pepper, and half the smoked paprika.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken in a single layer and sear for 2-3 minutes per side until golden brown. Remove to a plate.
  3. In the same skillet, add diced onion and cook for 3-4 minutes until softened. Add minced garlic and cook for 30 seconds until fragrant.
  4. Add sliced bell peppers, diced tomatoes with juices, chicken broth, remaining smoked paprika, oregano, and garlic powder. Simmer for 5 minutes.
  5. Return seared chicken and any juices to the skillet. Cover, reduce heat to medium-low, and simmer for 8-10 minutes until chicken is cooked through and peppers are tender.
  6. Taste and adjust seasoning. Garnish with fresh parsley before serving.

Notes

Do not overcrowd the pan when searing chicken. For a lower-carb option, serve over cauliflower rice. Leftovers freeze well for up to 3 months.
