Ingredients

Scale
  • 3 cups crispy rice cereal
  • 2 cups pretzel sticks, lightly crushed
  • 1 cup creamy peanut butter
  • 1/2 cup honey or maple syrup
  • 1/4 cup unsalted butter
  • 1 teaspoon pure vanilla extract
  • 1 cup semi-sweet chocolate chips
  • 1 tablespoon coconut oil or shortening

Instructions

  1. Line an 8×8 or 9×9 inch baking pan with parchment paper, leaving overhang on two sides for easy removal.
  2. In a large bowl, combine the crispy rice cereal and lightly crushed pretzel sticks.
  3. In a medium saucepan over low heat, melt together the peanut butter, honey, and butter, stirring until smooth. Remove from heat and stir in the vanilla.
  4. Pour the warm peanut butter mixture over the cereal and pretzels. Stir until everything is evenly coated.
  5. Press the mixture firmly and evenly into the prepared pan. Use the bottom of a measuring cup to pack it down tightly.
  6. In a microwave-safe bowl, melt the chocolate chips with the coconut oil in 30-second bursts, stirring between each, until smooth.
  7. Pour the melted chocolate over the pressed base and spread into an even layer.
  8. Let the pan sit at room temperature until the chocolate is set, or refrigerate for about 30 minutes to speed it up.
  9. Use the parchment paper to lift the whole slab out of the pan onto a cutting board. Slice into 16 bars.

Notes

Store in an airtight container at room temperature for up to 3 days. For a nut-free version, use sunflower seed butter. Press the base mixture very firmly to prevent crumbling when sliced.
