This set-it-and-forget-it comfort food transforms simple chicken into incredibly tender, flavorful shredded BBQ chicken with minimal effort. Perfect for a cozy family dinner, it also makes excellent leftovers for easy meals throughout the week.

  • 3-4 pounds boneless, skinless chicken breasts or thighs
  • 1 cup BBQ sauce
  • 1/2 cup chicken broth
  • 1/4 cup apple cider vinegar
  • 2 tablespoons brown sugar
  • 1 tablespoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt

Instructions

  1. Place the chicken pieces in the bottom of a slow cooker.
  2. In a medium bowl, whisk together the BBQ sauce, chicken broth, apple cider vinegar, brown sugar, smoked paprika, garlic powder, onion powder, black pepper, and salt.
  3. Pour the sauce mixture evenly over the chicken in the slow cooker.
  4. Cover with the lid and cook on LOW for 4-6 hours or on HIGH for 2-3 hours, until the chicken shreds easily with a fork.
  5. Use two forks to shred the chicken directly in the slow cooker, mixing it with the juices.
  6. Let the shredded chicken sit for 10-15 minutes on the WARM setting before serving.

Notes

For best results, use chicken thighs for a richer, more forgiving texture. The flavor deepens wonderfully when stored, making it ideal for meal prep. Avoid overcooking, especially with chicken breasts, to prevent dryness.
