  • 2 tablespoons olive oil or butter
  • 1 medium yellow onion, diced
  • 3 medium carrots, peeled and sliced into rounds
  • 3 celery stalks, sliced
  • 3 cloves garlic, minced
  • 8 cups chicken broth, low-sodium recommended
  • 1 pound boneless, skinless chicken breasts or thighs
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • 1 teaspoon black pepper
  • Salt, to taste
  • 8 ounces wide egg noodles, about 4 cups dry
  • 1/4 cup fresh parsley, chopped

Instructions

  1. In a large pot, heat oil over medium heat. Add onion, carrots, and celery. Cook for 8-10 minutes until softened. Stir in garlic and cook for 1 minute.
  2. Pour in chicken broth. Add whole chicken, bay leaves, thyme, and pepper. Bring to a gentle boil, then reduce to a simmer.
  3. Simmer for 15-20 minutes until chicken is cooked through. Remove chicken to a board, shred with forks, and discard bay leaves.
  4. Bring broth back to a simmer. Add dry egg noodles and cook for 6-8 minutes until al dente.
  5. Return shredded chicken to pot. Season with salt to taste. Stir in fresh parsley just before serving.

Notes

For best leftovers, cook noodles separately and add to each bowl to prevent them from becoming too soft. You can use leftover rotisserie chicken; add about 3 cups shredded meat in the last 10 minutes. Gluten-free noodles work well as a substitute.
