Dark Chocolate Sea Salt Nut Bars

These no-bake bars combine toasted oats, mixed nuts, and a rich dark chocolate topping with a sprinkle of flaky sea salt. They are a wholesome homemade snack perfect for lunchboxes or an afternoon treat.

  • 2 cups old-fashioned rolled oats (certified gluten-free if needed)
  • 1 cup mixed raw nuts (almonds, cashews, pecans)
  • 1/2 cup creamy almond butter or peanut butter
  • 1/3 cup pure maple syrup or brown rice syrup
  • 2 tablespoons coconut oil, melted
  • 1 teaspoon pure vanilla extract
  • 1/4 teaspoon fine sea salt
  • 1 cup dark chocolate chips or chopped bar (60-70% cacao)
  • 1 tablespoon coconut oil
  • Flaky sea salt, for sprinkling

Instructions

  1. Line an 8×8 inch baking pan with parchment paper, leaving overhang on two sides.
  2. Toast oats in a dry skillet over medium heat for 3-5 minutes until fragrant and lightly golden. Transfer to a large bowl.
  3. In a microwave-safe bowl, combine almond butter, maple syrup, and 2 tbsp melted coconut oil. Heat in 30-second bursts, stirring until smooth. Stir in vanilla and fine sea salt.
  4. Pour wet mixture over toasted oats and nuts. Mix until fully coated.
  5. Transfer mixture to prepared pan. Press down firmly and evenly with a flat-bottomed cup.
  6. Refrigerate base for 30 minutes.
  7. Melt dark chocolate and 1 tbsp coconut oil in microwave in 20-second intervals, stirring until smooth.
  8. Pour melted chocolate over chilled base. Spread evenly and sprinkle with flaky sea salt.
  9. Return to refrigerator for 30 minutes or until chocolate is set.
  10. Lift bars from pan using parchment. Cut into 12 bars with a sharp knife.

Notes

Press base firmly to prevent crumbling. Store in refrigerator for up to 2 weeks. For clean cuts, wipe knife with warm damp cloth between slices.
