A festive and refreshing non-alcoholic drink perfect for celebrations. This mocktail features a homemade strawberry syrup muddled with fresh berries, mixed with tart lemonade, and topped with sparkling water for a fizzy finish. Its beautiful blush-pink color and customizable sweetness make it a crowd-pleaser for any occasion.

  • For the Fresh Strawberry Syrup:
  • 1 cup fresh strawberries, hulled and sliced
  • 1/2 cup granulated sugar
  • 1/2 cup water
  • For the Lemonade Base:
  • 1 cup freshly squeezed lemon juice (from 4-6 lemons)
  • 4 cups cold water
  • Optional: 1-2 tablespoons additional simple syrup or honey, to taste
  • For Assembling Each Mocktail:
  • Ice cubes
  • 2-3 fresh strawberry slices, for muddling
  • Chilled sparkling water or club soda
  • Garnishes: whole strawberries, lemon slices, fresh mint sprigs, or edible flowers

Instructions

  1. Make the Strawberry Syrup: In a small saucepan, combine sliced strawberries, sugar, and water. Bring to a gentle simmer over medium heat, stirring until sugar dissolves. Simmer for 8-10 minutes until strawberries are soft and liquid is deep pink. Remove from heat, cool slightly, then strain through a fine-mesh sieve into a jar, pressing gently on berries. Discard pulp. Let syrup cool completely.
  2. Prepare the Lemonade: In a large pitcher, combine fresh lemon juice and 4 cups cold water. Stir well. Taste; it should be quite tart as sweetness will be added per glass.
  3. Assemble a Mocktail: In a tall glass, add 2-3 fresh strawberry slices. Gently muddle with a muddler or spoon to release juice.
  4. Fill the glass with ice cubes.
  5. Pour 1 1/2 to 2 tablespoons of cooled strawberry syrup over the ice (adjust to taste).
  6. Fill glass halfway with the prepared lemonade.
  7. Top the glass with a generous splash of chilled sparkling water or club soda.
  8. Stir gently to combine. Garnish with a whole strawberry, lemon slice, and mint sprig. Serve immediately.

Notes

For a lower sugar version, use a sugar substitute in the syrup or simply use less per glass. Do not add the syrup to the whole pitcher of lemonade; mix individually to keep the soda fizzy and allow for sweetness customization. The strawberry syrup and lemonade base can be made up to 3 days ahead and stored separately in the refrigerator.
