A vibrant, antioxidant-rich mocktail perfect for Valentine’s Day or any celebration. This hydrating drink features fresh lemon juice, real strawberries for a natural pink hue, and a touch of honey, all topped with sparkling water for a festive fizz. It’s a delicious, alcohol-free choice that pleases both adults and kids.

Ingredients

  • 4-5 medium lemons (for 3/4 cup fresh juice)
  • 1/2 cup honey, agave nectar, or simple syrup
  • 1 cup fresh or frozen strawberries, hulled and sliced
  • 4 cups cold water
  • 1-2 cups sparkling water or club soda, for serving
  • Optional garnishes: strawberry slices, lemon wheels, mint sprigs, edible rose petals

Instructions

  1. In a blender, combine the sliced strawberries and your chosen sweetener (honey, agave, or simple syrup). Blend on high until completely smooth.
  2. Optional: For a seed-free mocktail, strain the strawberry puree through a fine-mesh sieve into a large pitcher, pressing on the pulp. Otherwise, pour the puree directly into the pitcher.
  3. Add the fresh lemon juice and 4 cups of cold water to the pitcher with the strawberry puree. Stir vigorously with a long spoon until fully combined and a uniform pink color forms.
  4. Taste the mocktail base and adjust sweetness or tartness by adding more sweetener or lemon juice as needed. Remember it will be diluted with sparkling water.
  5. To serve, fill glasses with ice. Pour the mocktail base about 3/4 of the way up each glass.
  6. Top each glass with 2-3 ounces of chilled sparkling water or club soda to add fizz.
  7. Garnish immediately with a strawberry slice, lemon wheel, or mint sprig. Serve right away.

Notes

For a make-ahead option, prepare the mocktail base (without sparkling water) and store in a sealed pitcher in the refrigerator for up to 2 days. Always add the sparkling water to individual glasses just before serving to preserve the bubbles. For a sugar-free version, use a monk fruit simple syrup. Raspberries can be substituted for strawberries.
