This dessert features a soft sugar cookie crust topped with a creamy vanilla cream cheese layer and fresh, glazed fruit. It is a visually stunning, customizable treat perfect for sharing at any gathering.

Ingredients

Scale
  • 1 (17.5 oz) package refrigerated sugar cookie dough
  • 1 (8 oz) block full-fat cream cheese, softened
  • 1/3 cup granulated sugar
  • 1 teaspoon pure vanilla extract
  • 1/2 cup strawberry jam or apricot preserves
  • 1 tablespoon water or lemon juice
  • 3-4 cups assorted fresh fruit (strawberries, kiwi, blueberries, raspberries, mandarin oranges, grapes)

Instructions

  1. Preheat oven to 350°F (175°C). On a lightly floured surface, roll cookie dough into a 12-14 inch circle, 1/4-inch thick. Transfer to a pizza pan or parchment-lined baking sheet. Bake for 10-12 minutes until edges are lightly golden. Cool completely.
  2. While crust cools, beat softened cream cheese, sugar, and vanilla extract with an electric mixer until smooth and creamy, about 2-3 minutes.
  3. Spread cream cheese mixture evenly over the cooled cookie crust, leaving a small border.
  4. In a small microwave-safe bowl, combine jam and water. Heat for 20-30 seconds until warm and runny. Stir well.
  5. Arrange washed and sliced fruit decoratively over the cream cheese layer. Use a pastry brush to gently dab the warm jam glaze over the fruit.

Notes

Ensure crust is completely cool before adding cream cheese to prevent melting. Soften cream cheese fully for a smooth layer. Pat fruit dry after washing to avoid a watery topping. Assemble 1-2 hours before serving for best texture.
