Having these seasoned chicken and vegetable strips ready to roast transforms any busy weeknight into a fajita feast in minutes. It’s the kind of meal that feels like a warm hug at the end of a long day, a reliable answer to the what’s for dinner question that pops up right around 5 PM.

  • 1.5 lbs boneless, skinless chicken breasts or thighs, sliced into thin strips
  • 3 bell peppers (mix of red, yellow, and green), sliced
  • 1 large yellow or red onion, sliced
  • 3 tablespoons olive oil
  • 2 tablespoons fresh lime juice
  • 2 teaspoons chili powder
  • 1 ½ teaspoons ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • ¾ teaspoon kosher salt
  • ½ teaspoon black pepper
  • For serving: warm tortillas, sour cream, guacamole, shredded cheese, fresh cilantro, lime wedges

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Slice chicken, peppers, and onion into uniform strips.
  3. In a large bowl, whisk together olive oil, lime juice, and all spices (chili powder, cumin, smoked paprika, garlic powder, salt, and pepper). Add chicken strips and toss to coat.
  4. On a rimmed sheet pan, toss sliced peppers and onion with a drizzle of olive oil and a pinch of salt.
  5. Push veggies to the sides of the pan. Add seasoned chicken in a single layer in the center.
  6. Roast for 15-18 minutes, until chicken is cooked through and veggies are tender with caramelized edges.
  7. Remove from oven, toss everything together on the hot pan, and serve immediately with warm tortillas and desired toppings.

Notes

Do not overcrowd the pan to ensure proper roasting. For meal prep, slice chicken and veggies up to 2 days ahead. Ensure tortillas and seasonings are certified gluten-free if needed.
