A legendary, moist casserole that never dries out thanks to a secret splash of beef broth. This comforting dish, built from simple pantry staples, is a weeknight hero that pleases the whole family and disappears fast at potlucks.

  • 1 ½ pounds lean ground beef (85/15 or 90/10)
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 (15 oz) can tomato sauce
  • 1 (10.5 oz) can condensed cream of mushroom soup (or cream of celery)
  • 1 cup beef broth
  • 2 cups frozen mixed vegetables (peas, carrots, corn, green beans)
  • 3 cups cooked egg noodles (about 8 oz dry)
  • 1 ½ cups shredded cheddar cheese, divided
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • ½ teaspoon garlic powder
  • Salt and black pepper to taste
  • Optional garnish: fresh chopped parsley

Instructions

  1. Cook egg noodles to al dente according to package directions. Drain and set aside. Preheat oven to 375°F (190°C).
  2. In a large skillet over medium-high heat, cook ground beef and diced onion until beef is browned and onion is soft. Drain excess grease. Add minced garlic and cook for 1 minute until fragrant.
  3. Stir in tomato sauce, cream of mushroom soup, and beef broth. Add oregano, paprika, garlic powder, salt, and pepper. Simmer for 3-4 minutes.
  4. Remove skillet from heat. Gently fold in cooked noodles, frozen vegetables, and 1 cup of shredded cheddar cheese.
  5. Transfer mixture to a 9×13 inch baking dish. Sprinkle remaining ½ cup cheese evenly over the top.
  6. Bake for 25-30 minutes, until cheese is melted and golden and casserole is bubbling at the edges.
  7. Let casserole stand for 5-10 minutes before serving. Garnish with parsley if desired.

Notes

For best results, do not overcook the noodles (use al dente) and do not skip the beef broth, as it is the key to a moist casserole. Letting it rest before serving allows the sauce to thicken. For a gluten-free version, use gluten-free noodles and soup. Ground turkey or plant-based crumbles can be substituted for the beef.
