These wings achieve a deep-fried level of crispiness using an air fryer and a secret baking powder rub, all in about 35 minutes. They are a perfect weeknight dinner or game-day snack, easily customized with your favorite sauces.

  • 2 pounds chicken wings, split into drumettes and flats, patted completely dry
  • 1 tablespoon baking powder (NOT baking soda)
  • 1 ½ teaspoons kosher salt
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon black pepper
  • ½ teaspoon onion powder
  • Optional for serving: buffalo sauce, blue cheese dressing, ranch, or fresh lemon

Instructions

  1. Thoroughly pat each wing piece dry with paper towels to remove all surface moisture.
  2. In a large bowl, whisk together the baking powder, salt, garlic powder, smoked paprika, black pepper, and onion powder.
  3. Add the dried wings to the bowl and toss until every piece is evenly coated with the spice mixture.
  4. Arrange the wings in your air fryer basket in a single layer, ensuring they are not touching or overlapping. Cook in batches if necessary.
  5. Air fry at 400°F (200°C) for 12 minutes, then flip each wing.
  6. Continue cooking for another 10 to 14 minutes, until the skin is deep golden brown and crispy and the internal temperature reaches 165°F.
  7. Let the wings rest in the basket for 1-2 minutes to crisp further, then toss in sauce or serve with dips on the side.

Notes

The most important step is drying the wings completely. Do not substitute baking soda for baking powder, as it will create a metallic taste. For crispiest results, do not overcrowd the air fryer basket. Reheat leftovers in the air fryer at 375°F for 3-5 minutes to restore crispness.
