Ingredients

Scale
  • 1.5 lbs boneless, skinless chicken breasts or thighs
  • 1 tablespoon olive oil
  • 1 large yellow onion, diced
  • 2-3 cloves garlic, minced
  • 1 (4 oz) can diced green chiles
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and black pepper to taste
  • 4 cups low-sodium chicken broth
  • 2 (15 oz) cans cannellini beans, drained and rinsed
  • 1 cup frozen corn kernels
  • 4 oz cream cheese, softened and cubed
  • 1/2 cup sour cream
  • 1/2 cup shredded Monterey Jack or cheddar cheese

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion and cook until softened, about 5 minutes. Add garlic and green chiles; cook for 1 minute until fragrant.
  2. Sprinkle cumin, oregano, chili powder, cayenne (if using), salt, and pepper over the onions. Stir for 30 seconds to bloom the spices.
  3. Nestle the chicken into the pot. Pour in the chicken broth. Bring to a simmer, then cover, reduce heat, and cook for 15-20 minutes until chicken is cooked through.
  4. Remove chicken to a plate and shred with two forks.
  5. Add the drained beans and frozen corn to the pot. Simmer for 5 minutes.
  6. Reduce heat to low. Whisk in the cubed cream cheese and sour cream until completely smooth and melted.
  7. Return the shredded chicken to the pot. Stir in the shredded cheese until melted. Taste and adjust seasoning. Warm through for 2-3 minutes before serving.

Notes

For the creamiest texture, let the cream cheese soften at room temperature before using. Always add dairy on low heat to prevent curdling. Serve with toppings like cilantro, jalapeƱo, avocado, lime wedges, and tortilla chips.
