A rustic and comforting one-pan meal inspired by the Italian countryside. Tender chicken pieces are seared and simmered in a rich, creamy sauce with garlic, sun-dried tomatoes, and spinach. This dish transforms a regular weeknight into something special with minimal effort and cleanup.

  • 1.5 lbs boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1 tsp paprika
  • 0.5 tsp garlic powder
  • Salt and black pepper to taste
  • 2 tbsp olive oil
  • 1 small yellow onion, finely diced
  • 4-5 cloves garlic, minced
  • 1 cup sun-dried tomatoes, packed in oil, drained and roughly chopped
  • 2 cups fresh baby spinach
  • 1.5 cups heavy cream or half-and-half
  • 1 cup low-sodium chicken broth
  • 0.5 cup grated Parmesan cheese
  • 1 tsp Italian seasoning

Instructions

  1. Pat chicken pieces dry and toss with oregano, basil, paprika, garlic powder, salt, and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken in a single layer and cook for 5-7 minutes until golden brown and cooked through. Remove to a plate.
  3. Reduce heat to medium. Add diced onion to the skillet and cook for 3-4 minutes until softened.
  4. Add minced garlic and cook for 30 seconds until fragrant.
  5. Pour in chicken broth to deglaze the pan, scraping up browned bits. Simmer for 2 minutes.
  6. Stir in heavy cream, Italian seasoning, and sun-dried tomatoes. Bring to a gentle simmer.
  7. Reduce heat to low. Gradually whisk in grated Parmesan until smooth.
  8. Add fresh spinach and wilt into the sauce for about 1 minute.
  9. Return cooked chicken and any juices to the skillet. Stir and warm through for 2-3 minutes. Adjust seasoning.

Notes

For a good sear, do not crowd the pan; cook chicken in batches if needed. Use freshly grated Parmesan for a smoother sauce. To prevent the cream sauce from separating, keep the heat at a gentle simmer after adding dairy. Leftovers can be stored in the refrigerator for 3-4 days.
