  • 1 small yellow onion, finely diced
  • 3 cloves garlic, minced
  • 1 pound ground Italian sausage or lean ground beef
  • 1 (28-ounce) can crushed tomatoes
  • 2 cups chicken or vegetable broth
  • 1 cup heavy cream or half-and-half
  • 12 ounces short pasta like penne, rigatoni, or fusilli
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and freshly ground black pepper, to taste
  • 1 cup freshly grated Parmesan cheese, plus more for serving
  • Fresh basil or parsley, for garnish

Instructions

  1. Heat olive oil in a large, deep skillet or Dutch oven over medium heat. Add diced onion and cook until softened, about 3-4 minutes. Stir in minced garlic and cook for 30 seconds until fragrant.
  2. Add ground sausage to the pot. Cook, breaking it up with a spoon, until fully browned and cooked through.
  3. Pour in crushed tomatoes, broth, dried oregano, basil, and red pepper flakes. Stir well, scraping up any browned bits from the bottom of the pot.
  4. Stir in the dry pasta, ensuring it is mostly submerged in the liquid.
  5. Bring mixture to a boil, then reduce heat to a steady simmer. Cover and cook for 12-15 minutes, stirring occasionally, until pasta is al dente and most liquid is absorbed.
  6. Reduce heat to low. Stir in heavy cream and grated Parmesan cheese until melted and sauce is creamy. Season with salt and pepper to taste. Let sit off heat for 2-3 minutes to thicken.
  7. Garnish with fresh herbs and extra Parmesan. Serve immediately.

Notes

For a lighter version, swap heavy cream for full-fat coconut milk. Use gluten-free pasta if needed. Ensure your pot is large enough (at least 4 quarts) to prevent boiling over. Always add the Parmesan cheese over low heat to prevent it from becoming grainy.
