  • 2 tablespoons unsalted butter or olive oil
  • 1 large yellow onion, diced
  • 3 cups cooked corned beef, shredded or finely chopped
  • 3 cups cooked potatoes, diced
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Salt and freshly ground black pepper to taste
  • 2 tablespoons fresh parsley, chopped
  • 4 large eggs (optional)

Instructions

  1. Heat butter or oil in a large skillet over medium heat. Add diced onion and cook until soft and golden, about 5-7 minutes.
  2. Add cooked potatoes to the skillet. Spread in an even layer and cook undisturbed for 4-5 minutes to develop a crust. Stir and repeat until crispy in spots.
  3. Stir in shredded corned beef, smoked paprika, and garlic powder. Combine well and cook for 5-7 minutes, pressing down slightly to crisp.
  4. If using eggs, create 4 wells in the hash. Crack an egg into each well. Reduce heat to medium-low, cover, and cook until egg whites are set but yolks are runny, about 4-6 minutes.
  5. Taste and adjust seasoning with pepper and a little salt if needed. Garnish with fresh parsley and serve immediately.

Notes

For best results, use pre-cooked potatoes and corned beef. Do not stir too often to achieve maximum crispiness. Be cautious with salt as the corned beef is already seasoned.
