Ingredients

Scale
  • 1 package (12 count) Hawaiian sweet rolls or slider buns
  • 1 pound lean ground beef (85/15)
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • 1 teaspoon onion powder
  • ½ teaspoon garlic powder
  • 6 slices American cheese, torn to fit
  • ¼ cup finely diced white onion
  • 12-18 dill pickle slices
  • ½ cup mayonnaise
  • 2 tablespoons sweet pickle relish
  • 1 tablespoon yellow mustard
  • 1 teaspoon white vinegar
  • 1 teaspoon paprika
  • ½ teaspoon onion powder
  • ¼ teaspoon garlic powder
  • 4 tablespoons unsalted butter, melted
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • 1 tablespoon sesame seeds

Instructions

  1. Preheat oven to 350°F (175°C). Slice the package of rolls in half horizontally to create a top and bottom slab. Place bottom slab in a 9×13 inch baking dish.
  2. Make the special sauce: In a small bowl, whisk together mayonnaise, sweet pickle relish, yellow mustard, white vinegar, paprika, ½ teaspoon onion powder, and ¼ teaspoon garlic powder. Set aside.
  3. Cook the beef: In a skillet over medium-high heat, cook ground beef, breaking it up. Season with salt, pepper, 1 teaspoon onion powder, and ½ teaspoon garlic powder. Cook until no pink remains, about 7-8 minutes. Drain excess grease.
  4. Assemble: Spread half the special sauce over bottom rolls. Layer on cooked beef. Sprinkle diced onion over beef. Arrange pickle slices in rows. Drizzle remaining sauce over pickles. Top with torn cheese slices. Place top slab of rolls on.
  5. Make garlic butter: Mix melted butter with 1 teaspoon garlic powder and ½ teaspoon onion powder. Brush generously over top of rolls. Sprinkle with sesame seeds.
  6. Bake: Cover dish loosely with foil. Bake for 15 minutes. Remove foil and bake 5-7 more minutes until cheese is melted and rolls are golden. Let cool 5 minutes before slicing into individual sliders.

Notes

Let sliders rest 5 minutes after baking for neater slicing. For a lighter version, use lean ground turkey, light mayo, or add shredded lettuce. Store leftovers in an airtight container in the fridge for up to 2 days.
