  • 2 tablespoons olive oil or butter
  • 1 large yellow onion, diced
  • 3 medium carrots, peeled and sliced into coins
  • 3 celery stalks, sliced
  • 3 cloves garlic, minced
  • 8 cups good-quality chicken broth, low-sodium preferred
  • 1 pound boneless, skinless chicken thighs or breasts
  • 2 bay leaves
  • 1 teaspoon dried thyme or 3-4 fresh sprigs
  • 1 teaspoon dried parsley
  • Salt and freshly ground black pepper, to taste
  • 8 ounces wide egg noodles
  • Fresh parsley, chopped, for garnish

Instructions

  1. In a large pot, heat oil over medium heat. Add onion, carrots, and celery. Cook for 8-10 minutes until softened.
  2. Stir in minced garlic and cook for 1 minute until fragrant.
  3. Pour in chicken broth. Add raw chicken, bay leaves, thyme, and dried parsley. Season with salt and pepper. Bring to a gentle boil, then reduce to a low simmer. Cover and cook for 25 minutes.
  4. Remove chicken with tongs. Let cool slightly, then shred with two forks. Discard bay leaves.
  5. Return shredded chicken to the pot. Bring soup back to a simmer. Add egg noodles and cook for 6-8 minutes until al dente.
  6. Turn off heat. Taste and adjust seasoning with more salt and pepper if needed. Ladle into bowls and garnish with fresh parsley.

Notes

For gluten-free, use gluten-free pasta or rice. For quicker prep, use pre-cooked rotisserie chicken and add it in the last 10 minutes. To prevent mushy noodles, store leftovers with noodles separate from the broth.
