  • 8 ounces high-quality semi-sweet or bittersweet chocolate, chopped
  • 1 ½ cups granulated sugar
  • ¾ cup packed light brown sugar
  • 4 large eggs, at room temperature
  • 1 tablespoon pure vanilla extract
  • 1 cup all-purpose flour
  • ½ cup unsweetened cocoa powder
  • 1 teaspoon fine sea salt
  • 1 ½ cups semi-sweet chocolate chips or chunks

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper, leaving an overhang on two sides.
  2. In a large heatproof bowl, melt the butter and chopped chocolate together using a double boiler or microwave. Stir until smooth and glossy. Let cool for 5 minutes.
  3. Whisk the granulated and brown sugars into the warm chocolate mixture until fully incorporated.
  4. Add the eggs one at a time, whisking vigorously after each addition until the batter is smooth and slightly shiny. Stir in the vanilla extract.
  5. Sift the flour, cocoa powder, and salt over the wet ingredients. Gently fold with a spatula until just a few streaks of flour remain. Do not overmix.
  6. Fold in the chocolate chips.
  7. Pour the batter into the prepared pan and spread evenly.
  8. Bake for 35-40 minutes, until the top is set and has a thin crackly crust. A toothpick inserted into the center should come out with a few moist crumbs.
  9. Let the pan cool completely on a wire rack before slicing into squares.
