Cinnamon Swirl Banana Bread

This banana bread is a balanced treat, using whole wheat flour and less refined sugar. A warm cinnamon swirl adds incredible flavor, making it a smart choice for a satisfying snack.

  • 3 large very ripe bananas (about 1.5 cups mashed)
  • 1/3 cup melted coconut oil or unsalted butter, cooled
  • 1/2 cup pure maple syrup or honey
  • 2 large eggs, room temperature
  • 1 tsp pure vanilla extract
  • 1.75 cups white whole wheat flour or all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp fine sea salt
  • 1/4 tsp ground nutmeg (optional)
  • 1/3 cup coconut sugar or light brown sugar
  • 1 tbsp ground cinnamon
  • 1 tbsp all-purpose flour

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
  2. Make cinnamon swirl: In a small bowl, whisk 1/3 cup coconut sugar, 1 tbsp cinnamon, and 1 tbsp flour. Set aside.
  3. In a large bowl, mash bananas until mostly smooth. Whisk in melted oil, maple syrup, eggs, and vanilla.
  4. In a medium bowl, whisk 1.75 cups flour, baking soda, salt, and nutmeg (if using).
  5. Add dry ingredients to wet ingredients. Gently fold until just combined.
  6. Pour 1/3 of batter into pan. Sprinkle half the cinnamon sugar over it.
  7. Spoon another 1/3 of batter on top, spreading gently. Sprinkle remaining cinnamon sugar.
  8. Top with final 1/3 of batter. Use a knife to gently swirl in a figure-eight pattern 4-5 times.
  9. Bake 50-60 minutes, until golden and a toothpick inserted comes out clean.
  10. Cool in pan on a rack for 30 minutes. Remove and cool completely before slicing.

Notes

Use very ripe bananas for best sweetness. Do not overmix batter or over-swirl. Bread freezes well for up to 3 months.
