This is the ultimate make-ahead meal that tastes even better the next day. It combines classic Caesar flavors with hearty pasta and chicken for a satisfying main dish salad perfect for potlucks, weeknights, or packed lunches.

  • 1 lb short pasta, like rotini or farfalle
  • 1.5 lbs boneless, skinless chicken breasts or thighs
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried oregano
  • Salt and black pepper
  • 1 tbsp olive oil
  • 1 large head romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 0.5 red onion, thinly sliced
  • 0.66 cup shredded Parmesan cheese, plus more for serving
  • 1 cup homemade or store-bought croutons
  • 0.75 cup high-quality mayonnaise
  • 0.33 cup freshly grated Parmesan cheese
  • 3 tbsp fresh lemon juice
  • 2-3 anchovy fillets, minced, or 1 tsp anchovy paste
  • 2 cloves garlic, minced
  • 1 tsp Dijon mustard
  • 0.25 tsp Worcestershire sauce
  • Salt and freshly ground black pepper to taste

Instructions

  1. Cook the pasta in a large pot of salted boiling water until al dente. Drain, rinse under cool water, and spread on a baking sheet to cool completely.
  2. Season chicken with garlic powder, onion powder, oregano, salt, and pepper. Heat olive oil in a skillet over medium heat. Cook chicken for 6-7 minutes per side until cooked through. Let rest for 5 minutes, then dice or shred.
  3. Make the dressing by whisking together mayonnaise, grated Parmesan, lemon juice, minced anchovies, garlic, Dijon, and Worcestershire sauce until smooth. Season with salt and pepper.
  4. In a large bowl, combine the cooled pasta, chicken, romaine, tomatoes, and red onion. Pour about three-quarters of the dressing over the top and toss gently to coat. Add remaining dressing if desired. Fold in the shredded Parmesan cheese.
  5. Cover and refrigerate the salad for at least 1 hour to allow flavors to meld. Before serving, toss gently and top with croutons and extra Parmesan.

Notes

Ensure pasta is completely cool before adding dressing to prevent a gummy texture. The anchovy is the secret to authentic flavor but can be omitted. For make-ahead, prepare salad (minus croutons) up to 24 hours in advance. Add croutons just before serving to keep them crunchy.
