This one-pan wonder is the ultimate weeknight comfort food. Crispy potatoes and smoky sausage are coated in ranch seasoning and smothered in melted cheese for a simple, satisfying meal that comes together in under an hour.

  • 2 pounds baby potatoes (red, Yukon Gold, or a mix), halved or quartered
  • 1 tablespoon olive oil
  • 1 (12-14 ounce) package smoked sausage or kielbasa, sliced into 1/2-inch rounds
  • 1 (1 ounce) packet dry ranch seasoning mix
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • Optional for serving: chopped fresh parsley or chives, sour cream, hot sauce

Instructions

  1. Preheat oven to 400°F (200°C). Line a large, rimmed baking sheet with parchment paper or foil.
  2. In a large bowl, toss the halved potatoes with olive oil and the entire packet of ranch seasoning until evenly coated.
  3. Spread the seasoned potatoes in a single layer on the prepared baking sheet. Roast for 20 minutes.
  4. Remove the pan from the oven. Scatter the sliced smoked sausage over the potatoes, stir gently to combine, and return to the oven. Roast for another 15-20 minutes, until potatoes are tender and sausage is heated through.
  5. Remove the pan and evenly sprinkle the shredded cheddar and Monterey Jack cheeses over the top. Return to the oven for 3-5 minutes, or until the cheese is melted and bubbly.
  6. Let cool for a few minutes. Garnish with optional herbs and serve directly from the pan.

Notes

For extra crispy cheese, broil for the last 1-2 minutes, watching closely. Avoid crowding the pan to ensure the potatoes roast instead of steam. Shredding cheese from a block gives a smoother melt than pre-shredded.
