These Caprese Skewers are a quick, no-cook meal that comes together in minutes. Featuring fresh mozzarella, sweet tomatoes, and fragrant basil, they are perfect for busy weeknights or last-minute guests. Drizzled with olive oil and balsamic glaze, they offer a light, flavorful, and satisfying dinner.

Ingredients

  • 1 pound fresh mozzarella balls (ciliegine or bocconcini)
  • 1 pint cherry or grape tomatoes
  • 1 large bunch fresh basil leaves
  • 1/4 cup extra virgin olive oil
  • 1/4 cup balsamic glaze
  • Kosher salt to taste
  • Freshly cracked black pepper to taste
  • 6-inch wooden skewers

Instructions

  1. Drain the mozzarella balls and pat them dry with a paper towel. Rinse the tomatoes and basil leaves, then gently pat the basil dry.
  2. Thread each skewer with one tomato, one folded basil leaf, and one mozzarella ball. Repeat the pattern to fill the skewer.
  3. Arrange the assembled skewers on a large platter. Drizzle liberally with extra virgin olive oil.
  4. Sprinkle generously with kosher salt and freshly cracked black pepper.
  5. Just before serving, drizzle the balsamic glaze over the skewers in a zig-zag pattern.

Notes

For best results, pat ingredients dry to prevent a watery platter. Assemble skewers up to 4 hours ahead and add oil, salt, pepper, and glaze right before serving to keep basil vibrant. Use high-quality olive oil and ripe tomatoes for maximum flavor.
