These Buffalo Chicken Sliders are the ultimate game day or weeknight dinner. Juicy shredded chicken is coated in a tangy, buttery Buffalo sauce, topped with melted cheese, and baked on soft slider buns for a crowd-pleasing meal that comes together in under 30 minutes.

  • 3 cups cooked chicken, shredded
  • 1/2 cup Buffalo sauce
  • 1/4 cup unsalted butter, melted
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon smoked paprika (optional)
  • 12 slider buns or Hawaiian sweet rolls
  • 1 1/2 cups shredded Monterey Jack cheese
  • 1/4 cup blue cheese crumbles (optional)
  • 1/4 cup ranch or blue cheese dressing, for serving
  • 2 tablespoons chopped fresh chives or parsley, for garnish

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, combine shredded chicken, Buffalo sauce, melted butter, garlic powder, onion powder, and smoked paprika. Stir until chicken is evenly coated. Let sit for 5 minutes.
  3. Slice the entire package of slider buns in half horizontally. Place the bottom half in a 9×13 inch baking dish or on a parchment-lined baking sheet.
  4. Spread the Buffalo chicken mixture evenly over the bottom buns.
  5. Sprinkle shredded Monterey Jack cheese over the chicken, then top with blue cheese crumbles if using.
  6. Place the top half of the buns over the cheese.
  7. Cover the dish loosely with aluminum foil and bake for 10 minutes.
  8. Remove foil and bake for an additional 5-7 minutes, until cheese is melted and buns are lightly golden.
  9. Let cool for 2-3 minutes, then slice into individual sliders.
  10. Drizzle with ranch or blue cheese dressing and garnish with fresh chives before serving.

Notes

For a milder version, use half Buffalo sauce and half BBQ sauce. Rotisserie chicken works perfectly here. Let sliders rest briefly after baking for cleaner slicing. Can be assembled ahead and frozen before baking.
