  • 8 large eggs
  • 2 cups whole milk
  • 1/2 cup heavy cream
  • 1/2 cup granulated sugar
  • 1/4 cup packed light brown sugar
  • 1 tablespoon pure vanilla extract
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 cup fresh or frozen blueberries
  • 1/4 cup all-purpose flour
  • 1/4 cup packed light brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup (1/2 stick) cold unsalted butter, cubed
  • Maple syrup, for serving

Instructions

  1. Grease a 9×13 inch baking dish with butter or non-stick spray.
  2. Spread the cubed bread evenly in the dish. Scatter blueberries over the top.
  3. In a large bowl, whisk eggs, milk, cream, both sugars, vanilla, 2 tsp cinnamon, nutmeg, and salt until smooth.
  4. Slowly pour the custard evenly over the bread and blueberries. Gently press down on the bread with a spatula to help absorption.
  5. In a small bowl, combine flour, 1/4 cup brown sugar, and 1/2 tsp cinnamon for the topping. Cut in the cold butter until mixture resembles coarse crumbs. Sprinkle evenly over the soaked bread.
  6. Cover the dish tightly with plastic wrap and refrigerate for at least 8 hours, or up to 12.
  7. When ready to bake, preheat oven to 350°F (175°C). Let dish sit at room temperature while oven heats, about 20-30 minutes.
  8. Bake uncovered for 45-55 minutes, until the top is golden brown and the center is set (a knife inserted should come out clean).
  9. Let cool for 5-10 minutes before slicing. Serve warm with maple syrup.

Using stale, day-old bread is best to prevent a mushy texture. Do not skip the overnight chill; it’s crucial for the bread to fully absorb the custard. For a dairy-free version, use unsweetened almond or oat milk and vegan butter.
