A cozy one-pan wonder that simplifies the flavors of a loaded breakfast burrito into a hearty, sizzling skillet. Perfect for a quick weeknight dinner or a relaxed weekend brunch, it’s a family-friendly meal that’s endlessly customizable and ready in 30 minutes.

  • 1 tablespoon olive oil or butter
  • 1 pound ground breakfast sausage (mild or spicy)
  • 1 medium yellow onion, diced
  • 1 bell pepper (any color), diced
  • 2 cups frozen diced potatoes (hash browns)
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste
  • 6 large eggs, lightly beaten
  • 1 cup shredded cheddar cheese (or a Mexican blend)
  • For serving: warm flour tortillas, salsa, sour cream, sliced avocado, fresh cilantro

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add sausage, breaking it up with a spoon. Cook until browned, 5-7 minutes.
  2. Add diced onion and bell pepper to the skillet. Cook, stirring occasionally, until vegetables soften, about 5 minutes.
  3. Stir in diced potatoes, chili powder, cumin, garlic powder, salt, and pepper. Spread into an even layer. Cook undisturbed for 4-5 minutes to sear, then stir and repeat until potatoes are tender and golden.
  4. Reduce heat to medium-low. Pour beaten eggs evenly over the mixture. Let set for 30 seconds, then gently stir and fold until eggs are softly set, 3-4 minutes.
  5. Remove skillet from heat. Sprinkle shredded cheese over the top. Cover with a lid for 1-2 minutes until cheese is melted.
  6. Garnish with cilantro if desired. Serve directly from the pan with warm tortillas and toppings.

Notes

For a lower-carb version, omit potatoes and add extra bell pepper and mushrooms. Use plant-based sausage and cheese for a dairy-free or vegetarian option. Do not overcook the eggs; they will continue to cook off the heat.
