  • 1 cup mayonnaise
  • 1 (1-ounce) packet ranch seasoning mix
  • 1 (4.5-ounce) can of chopped green chiles, undrained
  • 1 cup shredded cheddar cheese
  • 1/2 cup chopped green onions
  • 1/2 cup cooked and crumbled bacon (about 6 slices)
  • Optional: 1/4 teaspoon smoked paprika for a smoky depth

Instructions

  1. Combine the Base: In a large mixing bowl, add the softened cream cheese, mayonnaise, and the entire packet of ranch seasoning. Use a hand mixer or a sturdy spatula to beat these together until the mixture is completely smooth and creamy.
  2. Fold in the Goodies: Add the canned green chiles (with their liquid), shredded cheddar cheese, most of the green onions (reserve some for garnish), and the crumbled bacon. Gently fold everything together with a spatula until just combined.
  3. Chill and Serve: Transfer the dip to a serving bowl, cover it, and let it chill in the refrigerator for at least 30 minutes. Right before serving, give it a stir, garnish with the remaining green onions, and perhaps an extra sprinkle of cheese and bacon.

Notes

For best results, make sure cream cheese is properly softened before mixing. The dip can be prepared 1-2 days in advance as flavors improve with time. Store leftovers in an airtight container in the refrigerator for up to 5 days. Do not freeze as the dairy base can separate.
