A bright, no-cook breakfast that comes together in minutes the night before. Sweet blueberries and zesty lemon combine with creamy oats and Greek yogurt for a refreshing, energizing start to your day.

  • 2 cups old-fashioned rolled oats
  • 2 cups milk of choice
  • 1 cup plain Greek yogurt
  • 3-4 tablespoons maple syrup or honey
  • Zest and juice of 1 large lemon
  • 1 teaspoon vanilla extract
  • 1 pinch salt
  • 1 1/2 cups frozen blueberries

Instructions

  1. In a large bowl, whisk together the milk, Greek yogurt, maple syrup, lemon zest, lemon juice, vanilla extract, and salt until smooth.
  2. Stir in the rolled oats until fully combined.
  3. Gently fold in the frozen blueberries.
  4. Divide the mixture evenly between four 16-ounce airtight containers or jars.
  5. Seal the containers and refrigerate for at least 6 hours, preferably overnight.
  6. Before eating, stir the oats well to combine. Enjoy cold.

Notes

Use old-fashioned rolled oats, not quick oats, for the best texture. The lemon zest is essential for maximum flavor. Oats can be stored in the fridge for 4-5 days.
