This blueberry baked oatmeal is a warm, comforting breakfast that slices like cake. It features tender oats, sweet blueberries, and warm cinnamon for a cozy, family-friendly meal. Perfect for make-ahead mornings or a special brunch.

  • 2 cups old-fashioned rolled oats
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon fine sea salt
  • 2 large eggs, lightly beaten
  • 1 3/4 cups milk
  • 1/3 cup pure maple syrup
  • 1/4 cup melted butter or coconut oil
  • 1 teaspoon pure vanilla extract
  • 1 1/2 cups fresh or frozen blueberries
  • Optional: handful of chopped walnuts or pecans, sprinkle of brown sugar

Instructions

  1. Preheat oven to 375°F (190°C). Grease an 8×8-inch or similar 2-quart baking dish.
  2. In a large bowl, whisk together the oats, baking powder, cinnamon, and salt.
  3. In a separate medium bowl, whisk the eggs, milk, maple syrup, melted butter (or oil), and vanilla until smooth.
  4. Pour the wet ingredients into the dry ingredients. Gently fold with a spatula until just combined.
  5. Gently fold in the blueberries (and most of the nuts, if using).
  6. Pour the batter into the prepared dish, spreading evenly. Top with reserved nuts or a sprinkle of brown sugar, if desired.
  7. Bake for 35-40 minutes, until the top is golden brown, edges pull away, and a toothpick inserted in the center comes out clean.
  8. Let the baked oatmeal rest in the pan for 10 minutes before slicing and serving.

Notes

For best texture, use old-fashioned rolled oats, not quick oats. Let the oatmeal rest after baking for clean slices. To prevent fresh blueberries from sinking, toss them in a tablespoon of flour or oats before folding in. The dish can be assembled the night before and baked in the morning.
