A quick and satisfying weeknight dinner that is faster than takeout. Tender marinated beef and crisp broccoli are coated in a savory, glossy sauce, ready in about 30 minutes.

Ingredients

Scale
  • 1 1/2 pounds flank steak or sirloin, thinly sliced against the grain
  • 3 tablespoons low-sodium soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon cornstarch
  • 2 teaspoons sesame oil
  • 3 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1/2 cup low-sodium beef broth
  • 1/3 cup low-sodium soy sauce
  • 3 tablespoons oyster sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon sesame oil
  • 1 large head broccoli, cut into florets (about 4-5 cups)
  • 1 medium yellow onion, sliced
  • 2 tablespoons vegetable or avocado oil, divided
  • Sesame seeds and sliced green onions, for garnish
  • Cooked white or brown rice, for serving

Instructions

  1. Marinate the beef: In a medium bowl, whisk together 3 tbsp soy sauce, 2 tbsp brown sugar, 1 tbsp cornstarch, 2 tsp sesame oil, garlic, and ginger. Add sliced beef, toss to coat, and let sit for 10-15 minutes.
  2. Make the sauce and prep veggies: In a separate bowl, whisk together beef broth, 1/3 cup soy sauce, oyster sauce, 2 tbsp brown sugar, 1 tbsp cornstarch, and 1 tsp sesame oil. Set aside. Cut broccoli and slice onion.
  3. Cook the broccoli: Heat 1 tbsp oil in a large skillet over medium-high heat. Add broccoli and stir fry for 3-4 minutes until bright green and crisp-tender. Remove to a plate.
  4. Cook the beef and onion: Add remaining 1 tbsp oil to skillet. Add onion and cook 1 minute. Add marinated beef in a single layer (cook in batches if needed). Sear 1-2 minutes, then stir-fry until just cooked through, about 2-3 minutes.
  5. Combine everything: Return broccoli to skillet with beef and onions. Re-whisk sauce and pour over everything. Stir constantly until sauce bubbles and thickens, about 1-2 minutes. Remove from heat.
  6. Serve: Spoon stir fry over cooked rice. Garnish with green onions and sesame seeds.

Notes

For tender beef, always slice against the grain. Do not overcrowd the pan when cooking the beef. For gluten-free, use tamari and check oyster sauce label. Sauce can be made ahead and stored in the fridge.
