Crispy tostada shells topped with smoky-sweet BBQ chicken, creamy refried beans, and fresh toppings. This quick and easy meal comes together in under 30 minutes for a satisfying weeknight dinner.

  • 2 cups shredded cooked chicken (rotisserie chicken works great)
  • 1 cup your favorite barbecue sauce
  • 8 tostada shells (or corn tortillas, fried or baked until crispy)
  • 1 can refried beans, warmed
  • 1 cup shredded Mexican blend cheese
  • 1 cup shredded lettuce
  • 1 medium tomato, diced
  • 1/2 cup sour cream
  • 1/4 cup chopped fresh cilantro
  • 1 jalapeno, thinly sliced (optional)
  • Hot sauce to taste

Instructions

  1. In a medium skillet over medium heat, combine the shredded chicken with the barbecue sauce. Stir until the chicken is well coated and heated through, about 5 minutes. The sauce should bubble gently and thicken slightly.
  2. While the chicken heats, warm the refried beans in a small saucepan over low heat, or microwave them in a covered bowl for about 1 minute. Stir occasionally to keep them smooth.
  3. Spread a generous layer of refried beans onto each tostada shell. Top with the BBQ chicken mixture, then sprinkle with shredded cheese.
  4. Add shredded lettuce, diced tomato, a dollop of sour cream, and a sprinkle of fresh cilantro. For heat, add sliced jalapeno and a few dashes of hot sauce. Serve immediately while shells are still crunchy.

Notes

Keep components separate for leftovers. Store BBQ chicken in the fridge for up to 4 days. For a lighter version, use Greek yogurt instead of sour cream. To prevent soggy shells, assemble just before serving.
