  • 4 medium sweet potatoes, scrubbed clean
  • 1 lb boneless, skinless chicken breasts
  • 1 cup BBQ sauce, plus more for drizzling
  • 1/2 cup chicken broth or water
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup sour cream or plain Greek yogurt
  • 2 green onions, thinly sliced
  • Fresh cilantro or parsley, for garnish (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Pierce sweet potatoes with a fork and roast directly on oven rack or a baking sheet for 45-60 minutes until very tender.
  2. While potatoes roast, combine chicken, 1 cup BBQ sauce, broth, smoked paprika, and garlic powder in a saucepan. Season with salt and pepper. Bring to a simmer, cover, and cook on low for 20-25 minutes until chicken is cooked through.
  3. Remove chicken, shred with two forks, and return to saucepan. Simmer uncovered for 5-10 minutes until sauce thickens and clings to chicken.
  4. Slice open roasted sweet potatoes and fluff insides with a fork. Divide BBQ chicken filling among them. Top with cheddar cheese.
  5. For melty cheese, broil for 2-3 minutes. Finish with a dollop of sour cream, a drizzle of BBQ sauce, and a sprinkle of green onions and cilantro.

Notes

Store components separately for best meal prep. The chicken filling freezes well for up to 3 months. Avoid undercooking the sweet potatoes and be sure to simmer the shredded chicken in the sauce to thicken it.
