These wholesome pancakes are naturally sweetened with ripe bananas and made with hearty oats. They come together quickly in a blender for a healthy, comforting breakfast that feels like a treat.

Ingredients

  • 2 large very ripe bananas
  • 2 large eggs
  • 1 cup old-fashioned rolled oats
  • 1/2 cup milk of choice
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon fine sea salt
  • Butter or oil for cooking

Instructions

  1. Combine bananas, eggs, oats, milk, vanilla, baking powder, cinnamon, and salt in a blender.
  2. Blend on high for 30-45 seconds until completely smooth. Let batter rest for 2-3 minutes.
  3. Heat a non-stick skillet or griddle over medium heat. Add a small amount of butter or oil.
  4. Pour about 1/4 cup of batter for each pancake onto the hot surface.
  5. Cook for 2-3 minutes until bubbles form on the surface and edges look set.
  6. Carefully flip pancakes and cook for another 1-2 minutes until golden brown and cooked through.
  7. Repeat with remaining batter, adding more butter or oil to the pan as needed.

Notes

For best results, use very ripe, spotty bananas. Do not press down on pancakes after flipping. Batter can be made the night before and stored in the refrigerator.
