These Banana Oatmeal Bars are a simple, wholesome snack perfect for busy mornings. Made with ripe bananas, oats, and natural sweeteners, they are easy to prepare and store well. A great way to use up brown bananas for a healthy treat.

  • 3 large very ripe bananas
  • 2 cups old-fashioned rolled oats
  • 1/2 cup creamy peanut butter or almond butter
  • 1/4 cup pure maple syrup or honey
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt
  • 1/2 cup mix-ins like chocolate chips, nuts, or dried cranberries

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper.
  2. In a large bowl, mash bananas until mostly smooth.
  3. Add peanut butter, maple syrup, and vanilla extract to bananas. Stir until well combined.
  4. In a separate bowl, whisk together oats, cinnamon, and salt.
  5. Pour dry ingredients into wet ingredients and mix until oats are coated.
  6. Fold in mix-ins like chocolate chips.
  7. Transfer mixture to prepared pan and press down firmly and evenly.
  8. Bake for 20-25 minutes, until edges are golden and top is set.
  9. Cool completely in pan on a wire rack before slicing into bars.

Notes

Use very ripe bananas for best sweetness and texture. Press mixture firmly into pan to help bars hold together. Cool completely before slicing to avoid crumbling. Store in fridge up to 1 week or freeze up to 3 months.
