This stunning dessert transforms a simple boxed cake mix and strawberry gelatin into a moist, flavorful masterpiece. The cake is soaked with liquid Jell-O, creating a beautiful polka-dot effect and incredible tenderness, then topped with a light, fluffy vanilla frosting. It’s an impressive, nostalgic treat that’s surprisingly easy to make.

  • 1 box (15.25 oz) white or yellow cake mix, plus ingredients listed on box (eggs, oil, water)
  • 1 box (3 oz) strawberry Jell-O gelatin
  • 1 cup boiling water
  • 1/2 cup cold water
  • 1 package (3.4 oz) instant vanilla pudding mix
  • 1 cup cold whole milk
  • 1 tub (8 oz) frozen whipped topping, thawed
  • Optional: Fresh strawberries or sprinkles for garnish

Instructions

  1. Preheat oven and prepare cake batter as directed on the box mix. Grease and flour a 9×13 inch baking dish. Pour in batter and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean. Let cool in pan on a wire rack for 20 minutes (cake should be warm, not hot).
  2. While cake cools, empty the strawberry Jell-O powder into a medium bowl. Pour in 1 cup boiling water and whisk vigorously for 2 minutes until completely dissolved. Stir in the 1/2 cup cold water.
  3. Using the handle end of a wooden spoon or a sturdy straw, poke holes all over the surface of the warm cake, spacing them about 1/2 to 1 inch apart. Ensure holes go all the way to the bottom.
  4. Slowly and evenly pour the liquid Jell-O mixture over the entire cake, aiming for the holes. Let the cake cool completely to room temperature, about 1 hour.
  5. For the frosting, in a large bowl, whisk the instant vanilla pudding mix with 1 cup cold milk for 2 minutes until it begins to thicken. Gently fold in the entire tub of thawed whipped topping until just combined and no streaks remain.
  6. Spread the frosting evenly over the completely cooled cake. Cover the pan loosely and refrigerate for at least 4 hours, or overnight, before serving. Garnish with fresh strawberries or sprinkles if desired.

Notes

Do not skip the chilling time; it is essential for the Jell-O to set and create the perfect texture. The cake can be made a day ahead. For clean slices, dip your knife in hot water and wipe it clean between cuts. Flavor variations are easy: try lemon cake with raspberry Jell-O or chocolate cake with cherry gelatin.
