A fresh and fast salad combining creamy avocado with crisp cucumber in a bright lime dressing. Ready in just 10 minutes, it’s a light yet satisfying side or light meal. This recipe is naturally vegan and gluten-free.

Ingredients

Scale
  • 2 large ripe avocados, diced
  • 1 English cucumber, thinly sliced
  • 1/4 cup finely chopped red onion
  • 1/4 cup chopped fresh cilantro or dill
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons fresh lime juice
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly cracked black pepper
  • Optional: 1/4 teaspoon red pepper flakes

Instructions

  1. In a large bowl, combine the diced avocado, sliced cucumber, chopped red onion, and fresh herbs.
  2. In a small bowl or jar, whisk together the olive oil, lime juice, salt, and pepper to make the dressing.
  3. Pour the dressing over the avocado and cucumber mixture.
  4. Gently toss everything together until evenly coated, being careful not to mash the avocado.
  5. Taste and adjust seasoning if needed. Serve immediately for best texture.

Notes

For best results, use avocados that yield gently to pressure. If using a standard cucumber, consider peeling it and scooping out the seeds to prevent a watery salad. This salad is best enjoyed fresh but leftovers can be stored in an airtight container in the refrigerator for up to 24 hours.
