These elegant bundles combine flaky puff pastry and tender asparagus with a creamy, herbed cheese filling. They are deceptively simple to make and perfect for entertaining or a special weeknight treat.

  • 1 sheet (8-10 oz) frozen puff pastry, thawed
  • 1 bunch fresh asparagus (20-24 spears), woody ends trimmed
  • 4 oz cream cheese, softened
  • 1/2 cup finely grated Parmesan cheese
  • 1 tsp lemon zest
  • 1 tbsp fresh chives, minced, plus more for garnish
  • 1 large egg, beaten (for egg wash)
  • Flaky sea salt and freshly cracked black pepper
  • Olive oil for drizzling

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a small bowl, mix softened cream cheese, grated Parmesan, lemon zest, and minced chives until smooth.
  3. On a lightly floured surface, roll the thawed puff pastry into a 10×14 inch rectangle. Cut into 6 equal strips (about 2.3 inches wide).
  4. Spread about 1 tablespoon of the cream cheese mixture down the center of each pastry strip.
  5. Place 3-4 asparagus spears on top of the cheese on each strip.
  6. Gently twist the pastry strips around the asparagus, overlapping the ends on the bottom. Place each bundle seam-side down on the prepared baking sheet.
  7. Brush each bundle generously with the beaten egg wash. Sprinkle with flaky salt and black pepper.
  8. Bake for 15-18 minutes, or until pastry is puffed and deeply golden.
  9. Let cool for 1-2 minutes on the baking sheet. Garnish with extra chives and a drizzle of olive oil before serving.

Notes

For make-ahead, assemble bundles and refrigerate up to 4 hours before baking, or freeze unbaked on a tray, then transfer to a bag. Bake from frozen, adding 5-7 minutes. Ensure asparagus is dry to prevent soggy pastry.
